Recipe of the Day: Go Mexican Without the Explosive Diarrhea


The allegory of the Mexican food is a unique one. Much like your average order from KFC, there’s no way you won’t be paying the price for it the next day (if not on the same day!) and yet you can’t stop yourself from having it. It’s like cocaine for your belly.

Alas, Mexican food is not exactly what you may call mainstream here in Cairo, but that doesn’t mean you can’t go about making it yourself. The ingredients for making quality, nutritious and non-diarrhea inducing Mexican food is well within your grasp in Cairo if you’ve got the right recipe formulated.

What you’ll need (Ingredients!) [Makes 4 servings. Serving Size: 2 Tacos]
  • 1 pound skinless, boneless chicken breasts, cut into 1/4-inch strips
  • ¾  teaspoon chile powder
  • ½  teaspoon garlic salt
  • ¼  teaspoon ground cumin
  • Cooking spray [Preferably use Canola Oil based sprays available in Seoudi market]
  • ⅛  teaspoon grated lime rind
  • 2 tablespoons fresh lime juice, divided
  • 2 tablespoons skimmed/low-fat milk
  • ½  ripe peeled avocado, diced
  • ½  cup thinly sliced green onions
  • ½ cup fresh spinach leaves
  • ¼  cup chopped fresh cilantro
  • 1 tablespoon olive oil
  • 2 tablespoons corn kernels
  • ¼  teaspoon salt
  • 8 (6-inch) corn tortillas [You can find those in the freezers of most large chain supermarkets]

How you’ll whip it up!
  1. 1. Heat a large skillet over high heat. Sprinkle chicken evenly with chile powder, garlic salt, and cumin.
  2. Coat pan with cooking spray.
  3. Add chicken to pan; cook for four minutes, stirring frequently.
  4. Remove chicken from pan.
  5. Combine lemon rind, 1 tablespoon lime juice, avocado in a blender or food processor; process until smooth.
  6. Combine remaining 1 tablespoon lime juice, spinach, corn kernels, onions, cilantro, oil, and salt, tossing to coat.
  7. Heat tortillas according to directions on the bag.
  8. Divide chicken mixture evenly among tortillas.
  9. Top each tortilla with about 1 tablespoon avocado mixture and 1/4 cup veggies mixture.
Well fuck me if that ain’t some good ass home made Mexican delight. This one will not only not send you running for the toilet seat but it’s quite nutritious and dare I say an excellent post-workout meal.

Recipe of the Day: Chicken Sandwich on-the-go

Hello Hello!

Another quick recipe for today, which I tried for the first time yesterday as part of my new nutrition plan on The Wellness Log. It's a fairly simple premise, it's a classic roast/grilled chicken sandwich with a twist!

Obviously there's some initial work that goes into it, mainly cooking the chicken itself. Aside from that the rest of the ingredients ought to be things you have lying around your kitchen counters, fridge or freezer. The following makes two sandwiches.

Ingredients

  • One roast/grilled chicken breast - diced (boneless)
  • Two whole grain bread buns (alternatively you can use Balady bread if you can get your hands on the one TBS makes - only produced in the Maadi branch!)
  • Three large leaves Lolla Rossa lettuce (any other type will do)
  • Handful raw baby spinach leaves (normal spinach will do as well)
  • One tablespoon avocado
  • Mustard
  • Balsamic vinegar
  • Cumin
  • Ginger
  • Black seeds (حبة بركة)


Process

  • What the fuck is wrong with you? Have you never made a sandwich before? Just add all the above inside the bread, sprinkle the sauces and spices on top and dig right fucking in!
